These baby led weaning blueberry muffins are so simple and took about five minutes of preparation (with a little assistance from my very helpful preschooler) and were baked in a preheated oven within 20 minutes. The recipe doesn’t involve any added sugar, with the blueberries providing more than enough sweetness, and each muffin is less than 90 calories, if you care about that sort of thing.

How to serve blueberry muffins to your baby

I sliced each muffin into three strips and left them on his tray to munch. They’re super soft and break up easily and the blueberries seep through the muffin creating a lovely tangy taste. Meanwhile my toddler, Dexter devoured two, without stopping for breath!

How long do the baby led weaning blueberry muffins last?

You can store these muffins in an airtight container for up to five days. I doubt you will need to keep than any longer than that as our batch was done within an hour of them being cooked! If you want to make double the quantity, simply double the recipe.

Can you make this recipe with frozen blueberries?

You sure can! Sometimes it can be more expensive to get hold of fresh blueberries, especially during the winter months and it’s much more cost effective to buy frozen blueberries.

Frozen blueberries can be dropped into the batter and will thaw as the pancake is cooking in the pan. Just be wary of particularly bigger blueberries which may not thaw completely. Give any particularly big ones a little squish once the pancake has cooled to make sure they won’t be a choking hazard.

How to make dairy free blueberry muffins for baby

I am often asked if my recipes can be made dairy free and in this case, it certainly can be. Simply switch the milk for a dairy-free alternative. You can use:

  • Oat milk
  • Soy milk
  • Breast milk
  • Dairy-free formula
  • Almond milk

Vegan blueberry muffins for baby

What about making these blueberry muffins for vegans? No worries! I haven’t tried this myself for this particular recipe, but many of my readers swear by flax eggs when it comes to removing the egg from many of my recipes.

Simply add 1 tbsp of ground flaxseed to 2.5 tbsp of warm water and mix until an egg-like consistency forms. Add this flaxegg to the pancake batter and you should get well bound blueberry muffins for your baby that don’t fall apart.

Ingredients

  • 150 grams plain flour
  • 1 tsp baking powder
  • 200 ml milk (oat, cows, breast etc)
  • 1 egg
  • handful blueberries

Instructions

  1. Preheat the oven to 180C (160C fan).
  2. Line a muffin tin with muffin cases. We use silicone ones.
  3. In a bowl, add flour and baking powder and mix thoroughly. Make a well and add a beaten egg and the 200ml of milk, whisking to combine.
  4. The batter should be the consistency of pancake batter - this will make sure the muffins are moist enough for baby. Fold in the blueberries.
  5. Bake in the oven for 20 minutes. Leave to cool throughly before serving to baby as they’ll be very hot.
