  • 1 cup all purpose flour (120 grams)
  • 4 large egg whites (120 grams)
  • 1/4 teaspoon salt (1.2 grams)
  • 1 cup sugar (200 grams)
  • 2 tablespoons oil or melted butter (30 grams)
  • 1 teaspoon vanilla extract (5 grams)
  • 2 tablespoons water (30 grams)

How To Make Chinese Fortune Cookies?

  1. Preheat the oven to 375 degrees, and line two baking sheets with parchment paper. Write your fortunes on 4-inch by 1 1/2 strips of paper.
  2. Add the flour, salt, sugar, and cornstarch into a large bowl and whisk together. You can use a hand mixer or stand mixer with a paddle attachment and mix to combine.
  3. In a separate bowl whip the egg whites and sugar until frothy using a whisk or mixing machine. Mix in the oil or melted butter, and vanilla extract and beat to combine.
  4. Sift the flour and salt into the egg-white mixture, and mix with a spatula or beat until pasty consistency.
  5. Add the water and mix until smooth. The batter will fall will ribbon consistency.
  6. Drop a tablespoon of cookie batter on lined baking sheets and spread evenly into a 4-inch circle using the back of the spoon. Repeat separating each cookie about 3 inches apart. You can only bake 3 cookies at a time because they will set quickly after bake. This will allow you time to shape each fortune cookie.
  7. Baking one cookie tray at a time for about 8-9 minutes or until lightly golden brown along the edges.
  8. Remove the fortune cookies from the oven, carefully remove each cookie using a spatula and place the fortune message in the middle, then using the top lip of a cup, bend and fold the flat side of the cookie downward by bringing the two edges together creating the fortune cookie shape. Immediately place the fortune cookie with the ends down into a muffin pan to set.
  9. Allow the fortune cookies to set for about 20 minutes.
  10. Bake the second sheet of cookies and repeat the process.
