This yummy ground chicken recipe has become one of our “go-to” recipes and is now a staple in our weekly food prep. It’s easy to prepare and throw together when you’re in a hurry. You can use it in a salad with guacamole, make tacos, add it to your scrambled eggs, or just mix it in with brown rice or quinoa! We usually make 2-3 lbs of this a week during our weekly food prep!

Why Choose Ground Chicken?

Many people ask why we reach for ground chicken in a lot of our recipes. The answer is that it tends to be one of the healthier options at the butcher. It is much easier to find antibiotic-free and free-range chicken that I feel better about eating. There is also significantly less fat in chicken than you would find in ground beef.

Can I grind my own chicken for this recipe?

Yes! While I ask them to grind it for me at the butcher counter in the grocery store, you can definitely do this yourself at home. If your market doesn’t carry just ground chicken breasts, you can invest in a meat grinder or meat grinder attachment for the stand mixer. It is an investment in money and time up front, but the results with your health are definitely worthwhile.

Pro Tip: When you find antibiotic-free and free-range chicken breasts on sale, buy in bulk and spend the time grinding the meat for future meals. Just pack in butcher paper and freezer storage bags with labels of what the meat is, how much is in the package, and the date it was ground to freeze

How Can I Serve Honey Chipotle Chicken?

The answer to this depends upon your personal dietary needs. Because of the versatility of this recipe, it ends up on the meal plan regularly.   1. Coat pan lightly with olive oil.
  2. Place meat, onion, and garlic in the pancook over medium-high heat until meat is cooked through.
  3. Turn heat to medium, add cumin, chipotle pepper spice, oregano, and diced tomato and continue to cook until all ingredients are mixed thoroughly.
  4. After meat is cooked, drizzle honey and mix into cooked meat. Add sea salt and pepper to taste.

    THE BEST RECIPE!!!! This is now going to be a staple in my house….WONDERFUL.

    I have made this four times in the past two days (twice for my fiance’s family with small, diced chicken breasts, and two batches at his house for this week (one with the diced chicken breasts, and one with fresh, ground elk meat.) I can honestly say this will be a staple in our home for a long, LONG time. We’ve put it on lettuce, on spinach, on spaghetti squash (my FAVE!), and in a breakfast burrito this morning with kale, a scrambled egg, and a dollop of 0% fat organic greek yogurt. SO. GOOD!!!
