- 2 chicken breasts, boneless and skinless
- 6 bacon slices, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 large avocado, thinly sliced
- 2 tbsp. avocado oil
- 2 tbsp. fresh rosemary, minced
- 6 cups mixed greens
- 1 bunch watercress
- Sea salt and freshly ground black pepper
Rosemary Dressing Ingredients
- ¼ cup olive oil
- 2 tsp. Dijon mustard
- ¼ cup red wine vinegar
- 2 tsp. fresh rosemary, minced
- Sea salt and freshly ground black pepper
Preparation
- Season the chicken with rosemary, salt, and pepper.
- In a bowl, combine all of the ingredients for the dressing, season to taste, and whisk until well emulsified.
- Heat the avocado oil in a skillet over medium-high heat.
- Add the chicken and heat until golden and cooked all the way through, about 5 to 6 minutes per side.
- Let the chicken rest, then slice it into strips.
