Cherry Garcia ice cream is made with vanilla ice cream, cherries, and fudge flakes. It has a creamy texture and a sweet cherry flavor that is perfectly complemented by the chunks of chocolate fudge. The cherries used in this flavor are maraschino cherries that are soaked in a syrup before being added to the ice cream mixture.

Why You Will Like This Recipe

There are two ways you can make this ice cream. Without an ice cream maker and with a Ninja Creami. I will tell you how to make it with easy step by step photos! I love using heavy cream and sweetened condensed milk for a vanilla base in a Ninja Creami. These weren't popular back when I shared this recipe in 2015.

To make it without an ice cream machine the whipped cream gets beat until stiff peaks form, and you can even do that with your hands. If not just use some electric beaters or a stand mixer! I've never tried whisking my own whipping cream, but I've seen the chefs on tv shows like Chopped do that. Then you fold in all the ingredients. I seem to have an ingredient problem whenever I make ice cream. Either I don't put in enough add-ins or I'll put in too much!

Since it's Cherries for Charity week, I picked up a 3 pound bag of cherries for a $1.99 a pound. The grocery store donates .25 of every pound of cherries sold to a local charity here in town. That is the best deal ever for cherries. Lately, they've been 3.99 a pound. Trust me, I'll be back for about 2 or 3 more bags of cherries by the end of the week. I'll be looking for more cherry recipes to make too.

What Ingredients do I need?

  • Heavy whipping cream is a dairy product that is widely used in cooking and baking. It is a rich, thick and high-fat cream with a buttery texture, which makes it perfect for adding a creamy and delicious flavor to dishes
  • Sweetened Condensed Milk - This type of milk is typically made by heating regular milk with sugar until the sugar dissolves and the liquid thickens.
  • Chocolate Chunks - or chocolate chips
  • Cherries - make sure they are pitted, if frozen let them defrost, best to make when they are in season!
  • Vanilla extract - It is made by macerating and soaking vanilla beans in a mixture of water and Vodka. Use a good pure vanilla instead of the imitation vanilla extract.

How to make Cherry Garcia Ice Cream

Step 1: In a stand mixer, beat the heavy cream until stiff peak forms.

Step 2: When the stiff peaks have formed, fold in the sweetened condensed milk, chocolate chunks, cherries, and vanilla.

Step 3: Freeze in a bread loaf pan until the ice cream has set.

Recipe Tip: You can add any extra ingredients on top of the ice cream. It kind of lets people know what is in there!

Recipe Tip: You can make this recipe in a Ninja Creami! The whipping cream and sweetened condensed milk would be a good base for vanilla ice cream. Once the topping is whipped and the milk is folded in add it to the pints and freeze it. Then when you are making the ice cream blend in the ingredients with the add-ins.

Cherry Garcia ice cream has chunks of chocolate and cherries in there, and oh man it is my favorite ice cream to eat on a hot Summer day. It really hits the spot!

  • 1 15 ounce can of sweetened condensed milk
  • 1 cup of chocolate chunks
  • 1 ½ cups of fresh cherries, pitted and cut in half
  • 1 tsp of vanilla extract

Ninja recommends freezing Creami bases for 24 hours, but we've had success with 8 to 12 hour freezing times, too. In our experience, freezing bases for 24 hours or longer usually meant they'd be very chalky on the first run through the Creami and require multiple respins.
