Has breakfast become a bit boring? I hear you; the same-old-same-old stuff day-after-day-after-day? It might be time to shake it up a little and try something fun and new ........... something quite respectably, "legal" too (since many of us are trying to eat a bit leaner and healthier as the new year continues to roll out).
We love this wonderful WarmMixed Berry Compote with Greek Yogurt in the morning. It's super easy to put together, can be made ahead and makes breakfast something to look forward to.
Made from fresh orange juice, frozen berries, honey, sugar, a splash of orange liqueur, orange zest and fresh thyme, this compote is sweet, fresh ............ and has vibrantly beautiful color too. It's a delightful way to start the day, transforming plain old Greek yogurt into something to behold ............... try it, you'll see just what I mean!
The best part about this compote is that you can make it ahead, store it in the fridge and have a fabulous breakfast all week with minimal effort! That also makes it perfect for breakfasts and brunches with friends ................ oh, and it looks gorgeous served in a pretty bowl on the buffet.
P.S. I love to serve this lovely compote with yogurt but it's also wonderful as a topping for pancakes, waffles, crepes, ice cream, frozen yogurt, cheesecake and ................ well, I'll let you create your own fun ways to use it, but me? I like to eat it right from the bowl, on it's own!
Oh, and one last thing - although this Warm Mixed Berry Compoteincludes honey and sugar for sweetening, it's mostly made up of fruit and juice. It makes a large batch, so the amount of sweetening per serving is fairly low. We like to eat it spooned over 0% fat Greek yogurt which has 18g of protein and only 100 calories for a 6 ounce serving (Chobani brand). This kind of breakfast is not only fabulously delicious, but the protein will keep you satisfied for hours!

CALORIES
Ingredients
- 2 cups fresh orange juice
- 4 tablespoon cornstarch
- 2 tablespoons Grand Marnier*, or other orange liquer
- ½ cup honey
- ¼ cup sugar
- 6 cups frozen mixed berries*
- 1 tablespoon fresh thyme leaves
- zest of 1 orange
- sea salt, a pinch
- Greek yogurt
- fresh fruit for garnish, if desired
Instructions
Combine cornstarch with 3 tablespoons of the orange juice in a small bowl. Set aside.
Combine remaining orange juice, Grand Marnier, honey and sugar in a medium-size sauce pan over medium-high heat. Bring to a boil, then reduce to a constant simmer and cook, uncovered, for 10 minutes.
Add frozen berries and return to a boil. Cook for 1 minute, then slowly add cornstarch mixture and cook, stirring continuously until compote is thick and glossy 1-2 minutes. Remove from heat and add fresh thyme orange zest and a pinch of sea salt. Stir to combine. Taste and add a bit more honey, if needed. The amount of honey will depend on your taste and the sweetness of your orange juice. Let cool a bit, but serve while still warm over Greek yogurt***. This compote keeps well for at least a week in the refrigerator and also freezes well. Thaw overnight in refrigerator.
For the garnish pictured, I just cut skewers to fit my glasses, then threaded them with fresh fruit and added a sprig of thyme.
Notes:
* ~ Grand Marnier can be omitted if you prefer to cook sans alcohol. The sauce will still be wonderful!
** ~ I used a frozen, pre-packaged mix with blackberries, blueberries, raspberries and strawberries. Use any of these frozen berries that you prefer in any ratio.
*** ~ This is also wonderful over ice cream, frozen yogurt, pancakes, waffles, French toast, crepes, cheesecake, panna cotta, etc.

Chris, your berry compote spiked with a touch of Grand Marnier totally speaks to me! I'm absolutely nutty about berries (as evidenced by my blog last summer). You are right...this recipe would make getting out of bed for a special breakfast something to look forward to. Thank you for sharing. Pinning!

This would be a perfect breakfast treat to serve all our house guests that we get at our cottage in Maine during the summer…I know they would all love it. I can make a bowl the night before and as they get up the next morning they can help themselves.
